- 2 medium red onions peeled sliced
- 80mls 1 3 cup olive oil
- salt ground black pepper
- 1 tablespoon wholegrain mustard
- 1 tablespoon white wine vinegar
- 250g mixed salad leaves washed dried
- 2 green shallots finely sliced
- 350g thinly sliced rare roast beef

- preheat a chargrill on high
- brush the sliced onions on both sides with 1 tablespoon of the olive oil and season with salt and pepper cook the onions on the pre heated chargrill for 1 2 minutes on each side or until tender
- combine the remaining olive oil mustard and vinegar in a screw top jar season with salt and pepper and shake well
- place the salad leaves and green shallots into a large bowl
