Make your own homemade foccacia, spiked with the fragrant flavour of fennel and the spice of fresh red chilli.
The ingredient of Fennel And Chilli Focaccia
- 310ml 1 1 4 cups warm water
- 2 teaspoons caster sugar
- 7g sachet dried yeast
- 450g 3 cups bread flour
- 2 teaspoons sea salt flakes
- 60ml 1 4 cup extra virgin olive oil
- 1 baby fennel bulb
- 2 teaspoons lemon juice
- 1 long fresh red chilli thinly sliced
- 1 sprig fresh rosemary leaves stripped
The Instruction of fennel and chilli focaccia
- combine the water sugar and yeast in a small bowl set aside in a warm place for 10 minutes or until frothy
- place the flour and half the salt in a large bowl make a well in the centre pour in yeast mixture and 2 tbs of the oil stir to combine then use your hands to bring the dough together in the bowl
- turn out onto a lightly floured surface and knead for 10 minutes or until smooth and elastic transfer to a greased bowl and cover set aside in a warm draught free place for 45 minutes or until doubled in size
- preheat oven to 220c 200c fan forced grease a baking tray with olive oil use a sharp knife to cut 8 thin slices from the centre of the fennel bulb brush the fennel with lemon juice to prevent discolouration
- turn dough onto a lightly floured surface and knead for 2 minutes or until smooth press over prepared tray press the fennel and chilli into dough cover with plastic wrap and set aside in a warm draught free place to prove for 30 minutes or until doubled in height
- drizzle dough with remaining oil sprinkle with rosemary and remaining salt bake for 20 25 minutes or until golden
