  • olive oil cooking spray
  • 8 thick slices wholemeal bread
  • 1 4 cup dijon mustard
  • 250g thinly sliced corned beef
  • 8 gherkins thinly sliced lengthways

  • preheat a sandwich press spray oil over 1 side of 4 slices of bread place onto a flat surface oil side down spread half the mustard over bread slices
  • top with corned beef and gherkins spread remaining mustard over remaining bread slices sandwich together spray with oil
  • place sandwiches 2 at a time into sandwich press cook for 6 to 8 minutes or until golden and crisp serve
