  • 4 300g each coles australian beef porterhouse steaks
  • 1 4 cup olive oil
  • 4 bunches asparagus trimmed
  • 80g rocket
  • 200g unsalted butter softened
  • 2 tablespoons green peppercorns in brine drained and chopped
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh tarragon chopped
  • 1 tablespoon shallots minced about 1 2 a small
  • 2 teaspoons hot english mustard

The Instruction of pan seared porterhouse steaks with asparagus and green peppercorn butter

  • using an electric mixer beat the butter in a large bowl on medium high speed for about 6 minutes or until the butter is light and fluffy add the green peppercorns lemon juice parsley tarragon shallots and mustard and mix on low speed for about 2 minutes or until the ingredients are well blended season with salt
  • bring the steaks to room temperature on a baking tray position a rack in the centre of the oven and preheat to 260c 240c fan
  • place 2 large heavy frying pans over high heat spread 1 tablespoon of oil over the steaks and season generously with salt and black pepper add 1 tablespoon of oil to each of the hot pans add the steaks and cook for about 3 minutes per side or until nicely browned on both sides and the internal temperature is 50c for medium rare doneness transfer the steaks to a carving board and rest for 5 minutes
  • meanwhile on a heavy baking tray toss the asparagus with the remaining 1 tablespoon oil and season with salt and pepper roast in the oven for about 7 minutes or until slightly charred but just tender
  • divide the asparagus among 4 dinner plates mound the rocket on the asparagus slice the steaks against the grain and place over the rocket drizzle with any accumulated steak juices spoon a dollop of the butter on top of the steaks and serve keep any remaining butter wrapped in the refrigerator
