Green beans add colour and flavour to this hearty steak and potato salad.

  • 750g baby potatoes sliced
  • 100g green beans trimmed
  • 4 beef sirloin steaks trimmed
  • 1 3 cup ready made pesto
  • 100g baby spinach leaves

The Instruction of beef salad with pesto potatoes

  • cut the potatoes into 1cm thick slices and boil or steam until tender remove from heat and set aside
  • meanwhile blanch the beans in a saucepan of boiling water until tender then plunge into iced water drain and set aside
  • heat a stove top grill or barbecue over high heat brush the steaks with a little oil and sprinkle with salt and cracked black pepper cook steaks for 3 minutes each side or until cooked to your liking remove cover and keep warm
  • combine the potatoes and pesto and toss to coat evenly to serve cut the steak into slices arrange potato and spinach leaves on a serving plate with the beans and steak
