- 2 medium brown onions finely chopped
- 3 garlic cloves crushed
- 2 tablespoons chopped fresh oregano leaves
- 450g lean beef mince
- 1 3 cup grated parmesan cheese
- 1 cup 150g cooked brown rice
- 1 cup 100g finely grated mixed vegetables see note
- pinch ground nutmeg
- 2 x 400g cans no added salt chopped italian tomatoes
- 2 tablespoons salt reduced tomato sauce
- mashed pumpkin to serve
- shaved parmesan to serve
The Instruction of cheesy beef and rice meatballs
- spray a frying pan with oil heat over medium heat add onion garlic and oregano cook stirring for 5 minutes remove from heat cool for 10 minutes
- transfer half the onion mixture into the bowl of a food processor add mince parmesan rice vegetables and nutmeg season with salt and pepper process until combined using wet hands shape level tablespoons of mixture into balls place on a plate cover with plastic wrap refrigerate for 15 minutes
- reheat remaining onion mixture over medium heat add tomatoes and tomato sauce bring to the boil reduce heat to low simmer stirring occasionally for 15 minutes or until slightly thickened
- meanwhile spray a large frying pan with oil heat over medium high heat cook meatballs in batches turning for 5 minutes or until browned transfer to the sauce simmer for 5 minutes or until cooked serve with mashed pumpkin and parmesan
